Unfortunately, this is not possible. You need to buy separate tickets for each stop, e.g. Beijing-Ulan Bator, Ulan Bator-Irkutsk, Irkutsk-Moscow.
Otherways, you have to stick with the same train for which you have the ticket and the seat reservations.
